Ingredients
2 tsp olive oil
900 gram ground turkey 93% lean
50 gram onion finely diced
1 tbsp minced garlic
30 gram carrots
115 gram bell pepper strips
1 - 28 ounce can diced tomatoes
3 - 8 ounce cans tomato sauce
3/4 cup chicken broth
2 tbsp chili powder
1 tsp cumin
2 tsp smoked paprika
2 tsp cocoa powder, unsweetened
1 tsp monk sugar
1-1/2 tsp salt
1/2 tsp pepper
2 -15 ounce cans kidney beans drained and rinsed
Directions
Heat the olive oil in a large pan over medium high heat. Add the turkey and season with 1 teaspoon salt and 1/2 teaspoon pepper. Cook, breaking up the meat with a spoon, until turkey is browned and cooked through.
Add the onion to the pan, and cook for 3-4 minutes or until softened. Add the garlic and cook for another 30 seconds.
Place the turkey in the slow cooker along with the tomatoes, tomato sauce, chicken broth, chili powder, cumin, smoked paprika, cocoa powder, sugar and remaining 1/2 teaspoon salt.
Stir to combine, then cook on LOW for 6 hours. Add the beans and cook for an additional 20 minutes until beans are warmed through. Add toppings such as sour creme and cheese and green onions if desired, then serve immediately.
Serve over cauliflower rice or a garlic baguette.
