Cauliflower Medley

Ingredients
580 grams Cauliflower rice
170 grams portobello mushrooms
70 grams kale
100 grams red bell peppers
1 tbsp olive oil infused with lemon
1/2 tsp sea salt
1/2 tsp black pepper
1 tsp za'atar blend
1 tbsp greek seasonings
Directions
Heat the olive oil in a large pan over medium heat.
Add the portobello mushrooms and sauté for about 5 minutes until they start to soften.
Add the red bell peppers and cook for another 3-4 minutes.
Stir in the kale and cook until it wilts, about 2-3 minutes.
Add the cauliflower rice and mix well. Cook for another 5-7 minutes until everything is heated through.
Season with sea salt, black pepper, za’atar blend, and Greek seasonings. Stir well to combine all the flavors.
Serve hot and enjoy your flavorful cauliflower medley!
