Marinated Mozzarella Balls, Artichokes and Olives

Serve as alone standing salad or appetizer.

Ingredients 

1/2 cup olive oil

3 tbsp red vinegar

1 tsp dried italian seasoning

1 zest small lemon

salt and pepper, to taste

1 tsp aleppo pepper

20 gr sun dried tomatoes

12 oz marinated artichokes

8 oz mini fresh mozzarella balls

1 1/2 cup stuffed green olives

fresh herbs, thyme, rosemary, oregano, basil, parsley.

chopped pistachios

Directions

Combine olive oil, vinegar, garlic, italian seasoning, fresh herbs, lemon zest, salt and pepper in a bowl.

Toss the artichokes, mozzarella and olives in the mixture until evenly coated.

Let rest for at least 30 minutes, this salad is best in room temperature.

Garnish with the chopped pistachios.
