Rolled Steak Filled with Veggies

This is a neat recipe for a shank steak. Just flatten your steak as thin as possible, fill with the veggies, etc and roll up.
Ingredients
1 steak, shank or skirt
1/4 cup olive oil
4 ounces cream cheese, softened
2 carrots, sliced lengthwise
1 cup onions slices
2 cups squash cut lengthwise
1 tbsp garlic powder
1 tsp thyme
1 tbsp parsley
1 tbsp salt
1 tbsp pepper
3 slices provolone cheese
1/2 cup steak fries (your favorite)
Directions
Ask your butcher for the largest and thinnest cut of beef possible. You want something about 12-by-12-inches wide and about _-inch thick or so.
Lay the steak out on a cookie sheet and brush with a bit of olive oil. Spread cream cheese over steak, add carrots, onions, squash, garlic, thyme, parsley, salt, pepper and provolone cheese.
Gently roll the entire steak and either wrap with cooking string or secure with skewers. Baste the steak roll with your steak sauce and grill over high heat to brown (sear) edges.
Wrap in foil and continue to cook for about 20 more minutes over medium heat. Turn often. Remove, unwrap and slice carefully to keep the shape.
