Green Bean Soup

German Green Bean Soup, known as "Grüne Bohnensuppe," is a comforting and hearty dish that is perfect for cooler weather. 

Ingredients

1 pound Beef stew

500 g fresh green beans, trimmed and cut into pieces

2 large potatoes, peeled and diced

1 large onion, finely chopped

2 carrots, sliced

1 leek, sliced

50 gram bacon

1.5 liters vegetable or chicken broth

Salt and pepper to taste

Thyme and summer savory (bohnenkraut)

Fresh parsley, chopped (for garnish)

Directions

Prepare the meat: Season the meat with salt and pepper and brown it in a large pot. Remove the meat and add the bacon, Grilling bacon until it's brown and crispy, remove the Bacon to a plate with the beef.

Prepare the vegetables: In the same pot, bring the broth to a boil. Add the green beans, 

the thyme and summer savory (bohnenkraut) potatoes, carrots, and leek. Cook until the vegetables are tender, about 20-25 minutes.

Season: Taste and season the soup with salt and pepper.

Garnish: Serve hot, garnished with fresh parsley.
