Greek Cauliflower Rice Bowl with Turkey

These healthy Greek-inspired cauliflower rice bowls topped with feta, olives, veggies and grilled turkey are impressive yet take just 30 minutes to make. 

Ingredients 


Turkey Breast

200 grams turkey breasts

1 tbsp olive oil

1/4 tsp salt

1/4 tsp black pepper


Cauliflower Rice

1 tbsp olive oil

340 grams Cauliflower rice

50 grams onions

1/4 tsp salt

1/4 cup dill

 

Dressing

 2 tbsp olive oil

1/2 tsp ground black pepper

1/4 tsp salt

3 tbsp lemon juice

1 tsp oregano

2 tsp Dijon style mustard

1 tbsp minced garlic

50 gram tomatoes

50 gram cucumbers

60 gram feta cheese

200 gram Romaine lettuce

Directions


Rub 1 tbsp olive oil all over turkey. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Grill, turning once, about 15 minutes total. Slice crosswise. Preheat grill to medium.

Heat 2 tablespoons oil in a large skillet over medium-high heat. Add cauliflower, onion and 1/4 teaspoon salt. Cook, stirring occasionally, until the cauliflower is softened, about 5 minutes. Remove from heat and stir in 1/4 cup dill.

Meanwhile, whisk the remaining 4 tablespoons oil, lemon juice, oregano and the remaining 1/4 teaspoon each salt and pepper in a small bowl.  Divide the cauliflower rice between 2 bowls. Top with the turkey, tomatoes, cucumber, olives and feta. Sprinkle with remaining 1/4 cup dill. Drizzle with the vinaigrette. Serve with lemon wedges, if desired.
