Dill Salmon Cakes with Feta

Feta and fresh dill flavor these crispy salmon cakes. Pair with your favorite dipping sauce or serve over a bed of greens for a quick, tasty meal.

Ingredients 

200 gram salmon

1 large egg

15 gram scallion, small chopped

1/4 cup dill

1/2 tsp sea salt

1/4 tsp black pepper

60 gram feta cheese

10 gram nut crumbs

1 tsp agar agar

lemon wedges

Directions

Combine salmon, eggs, scallions, dill, salt and pepper in a large bowl. Fold in nut crumbs and feta. Form into 3 patties, about 3 inches wide.

Heat oil in a medium nonstick skillet over medium heat. Add the cakes and cook, flipping once, until golden on both sides, 6 to 8 minutes. Serve with lemon wedges, if desired.
