Tuscan Garlic Chicken

Ingredients
4 boneless skinless chicken breasts
1 fine sea salt (to taste)
1 freshly cracked black pepper (to taste)
2 tbsp unsalted butter
3 tsp garlic cloves (minced)
1 tsp Italian seasoning
1/2 cup drained sun-dried tomatoes (finely chopped)
3/4 cup heavy cream
1/2 cup low sodium chicken broth
1 cup loosely packed spinach (chopped)
2 tbsp grated parmesan
1/2 freshly chopped basil
Directions
Heat olive oil, butter or ghee in a large skillet on medium high heat. Sear the chicken until brown and cooked through on each side. For this recipe, you can use chicken thighs or chicken breasts and adjust the cooking time accordingly. Chicken thighs usually take around 7-8 minutes per side and chicken breasts 3-5 minutes per side.
Remove the chicken from the pan and set aside on a plate.
Whisk until smooth then stir in the parmesan cheese.
Add basil and spinach and let it simmer until the spinach starts to wilt.
Add the chicken back to the pan and serve with your favorite sides or over zucchini noodles or cauliflower rice
