Pecan Chicken Salad

This chicken salad comes together fast using rotisserie chicken breasts. The herbs, along with the pecans, help to make this chicken salad flavorful. Serve on top of toasted croissants, or butter lettuce. 

Ingredients 

560 gram rotisserie chicken

60 gram celery

60 gram pecans, roasted

120 gram olive oil mayo

90 gram greek yogurt

2 tsp champagne vinegar

1/2 tsp garlic powder

1/4 tsp dried thyme

1/2 tsp aleppo pepper

20 gram onion

70 gram red grapes, seedless

20 gram green onion

Directions

Shred the chicken in pieces. Mix mayonnaise, Greek yogurt, vinegar, garlic powder, thyme, and maple pepper together in a bowl until well combined. Add chicken, celery, pecans, and red onion; stir well to incorporate. Serve immediately or refrigerate for up to 3 days.
