Räuberbraten is a traditional German dish, often enjoyed as a hearty meal. The name translates to “robber’s roast,” and it typically features a pork neck roast that’s marinated and slow-cooked to perfection. The dish is known for its rich flavors, which come from a combination of ingredients like onions, garlic, mustard, ketchup, and various spices
Ingredients
1-1/2 kg pork neck
2 tbsp mustard
2 tbsp tomato ketchup
salt and pepper, to taste
pickles
onion, sliced
garlic
paprika powder
water
Directions
Cut the pork neck from above at a distance of approx. 2 cm so that the individual slices are still connected to each other. Make a strong seasoning mixture of mustard, ketchup, salt, pepper and paprika and spread it into the spaces created. Then place 1-2 slices of onion and, if you like, garlic in each space. Feel free to spread the remaining seasoning mixture onto the roast piece. Then place in the roasting tube (or a closed pan) with 1 cup of water and cook in the oven at 392F for about 2 hours. Finally, let it crisp up for another 30 minutes without the frying tube or pan lid.
Tastes very good with bread, but also with potatoes and vegetables. Ideal for parties as the roast stays warm for a long time in the oven and gets better with time.
