Pumpkin parfait is a delightful and festive treat that perfectly encapsulates the flavors of fall. This layered dessert typically combines rich, spiced pumpkin puree with creamy yogurt or whipped cream, and a crunchy granola or ginger snap cookie crumble. The contrasting textures and flavors create a harmonious blend that is both satisfying and visually appealing.

Ingredients

230 grams organic pumpkin 

1 tbsp vanilla extract

1/2 tsp ground cinnamon

1/8 tsp ground nutmeg

1/8 tsp nutmeg

100 grams plain greek yoghurt 

11/2 tbsp crème cheese 

2 tbsp sugar free maple syrup 


Directions

Place the pumpkin puree, Greek yogurt and the remaining ingredients, except the chocolate chips and nuts, in a large mixing bowl. Using a hand electric mixer or a whisk, mix together until you reach a smooth consistency.

Give it a taste and adjust flavor to your liking. Mix again to combine.

Transfer the pumpkin-yogurt mixture to small (3-oz) serving goblets or small mason jars. Cover and refrigerate for 30 minutes or overnight.

When ready to serve, top each with a drizzle of syrup, chocolate chips and chopped hazelnuts or walnuts.
