Ingredients

1 bunch red radishes (about 8-10 radishes)

1 cup water

1 cup apple cider vinegar

2 tablespoons sugar1 tablespoon salt

1 teaspoon mustard seeds (optional)

1 teaspoon crushed red pepper flakes (optional)

2 cloves garlic, peeled and smashed

Directions

Wash and trim the radishes, slicing them thinly or into quarters as preferred.

In a medium saucepan, combine water, apple cider vinegar, sugar, salt, mustard seeds, and crushed red pepper flakes.

Bring the mixture to a gentle boil over medium heat, stirring until the sugar and salt are fully dissolved.

Once dissolved, remove from heat and add the smashed garlic. Let the brine cool for about 10 minutes.

Place the sliced radishes in a clean jar, packing them tightly.

Pour the cooled brine over the radishes, ensuring they are fully submerged.

Seal the jar tightly and refrigerate for at least 24 hours before enjoying. They will be ready to eat, but flavors deepen after 2-3 days.
