Ingredients
2 large flank steaks (or your preferred cut for stuffing)
Salt and black pepper to taste
1 tbsp olive oil
Filling:
1/2 cup cream cheese, softened
1 cup mixed vegetables (bell peppers, zucchini, carrots, etc.), finely diced
1 small onion, finely diced
1 cup shredded pepper jack cheese
1 tsp garlic powder
1 tsp smoked paprika
1 tsp dried oregano
Salt and black pepper to taste
Directions
Prepare the Filling:
In a large bowl, combine the cream cheese, mixed vegetables, diced onion, shredded pepper jack cheese, garlic powder, smoked paprika, dried oregano, salt, and black pepper. Mix until well combined.
Prepare the Steaks:
Lay the steaks flat on a cutting board and pound them to an even thickness using a meat mallet. Season both sides with salt and black pepper.
