These Lemon Poppyseed Overnight Oats are like your favorite muffin flavor in oatmeal form! These brightly flavored oats are a great way to kickstart your day.

Ingredients

1/3 cup plain greek yogurt

1/2 cup (heaping) rolled oats

2/3 cup unsweetened milk of choice

1 tbsp lemon juice

1/2 tsp lemon zest

2 tsp poppyseeds

1 tbsp ground flax meal or chia seeds

1/2 tsp vanilla extract

1 pinch of salt

2 tbsp maple syrup


Directions

To make it, simply mix rolled oats with Greek yogurt, almond milk, fresh lemon juice, lemon zest, poppyseeds, and a touch of honey for sweetness. 

Allow the mixture to sit in the refrigerator overnight, letting the oats soak up the flavors and soften to a creamy consistency. In the morning, give it a good stir and top with fresh berries or a drizzle of honey for added flavor.
