Mint Tzatziki

Ingredients

1 cup greek yogurt fat free

1/4 cup finely grated cucumbers

1 tbsp finely chopped mint

1 tbsp lemon juice

1 tbsp olive oil infused with lemon

2 garlic cloves, finely minced

1/2 tsp salt

1/2 tsp pepper

to serve - pitas, chopped mint, lemon juice

Direction

In a medium-sized mixing bowl, combine the Greek yogurt, grated cucumber, chopped mint, lemon juice, lemon-infused olive oil, and minced garlic.

Stir the mixture thoroughly until all ingredients are well integrated.

Season with salt and pepper to taste and mix again to ensure even distribution.

Transfer the tzatziki to a serving dish, cover, and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve chilled with pitas, and garnish with additional chopped mint and a drizzle of lemon juice, if desired.
