Black Forest Meatballs

The Black Forest ground meat roulade is a delightful German dish that combines rich flavors and textures. This roulade typically features ground meat, such as beef or pork, rolled and filled with a savory mixture of pickles, onions, and ham.
Ingredients
1080 grams sirloin ground beef
1 egg
1 1/2 tbsp mustard
50 grams onions
1 tbsp olive oil infused with lemon
1 1/4 bunches parsley
1 Salt and pepper (to taste)
20 grams pork rinds, epic pork BBQ
1 tbsp salt
1/2 tbsp black pepper
1/2 tbsp garlic powder
1/2 tbsp ginger, lemon sriracha spice blend
Filling
90 grams honey ham
30 grams prosciutto
70 grams pepper jack cheese
130 grams gundelsheimer pickels
100 grams thin sliced onions
1/2 cup beef bone broth
1 tbsp agar powder
1/2 cup half and half
1 1/4 liters water
Directions
Knead ground beef with, eggs, onion cubes, mustard, salt, pepper and sweet paprika and pork rinds.
Make 10 balls and flat them out. Top with one slice each of ham, cheese and one pickle and onion rings. Roll up with the help of the lower cling film, stuck with wooden skewers.
Heat oil in a pan. Fry roulade in it for about 10 minutes. Take out.
Fry onion rings in frying fat until golden brown. Sauté agar agar in it. Stir in approx. 1/2 l of water, cream and broth, bring to the boil. Place roulade in the sauce and stew covered for about 15 minutes.
Wash parsley, chop. Season onion sauce with salt and pepper. Arrange everything and sprinkle with parsley.
Spaetzle or boiled potatoes taste good with it.
