Easy Meatball Soup

Nothing more comforting than this easy meatball soup with Italian-style meatballs and veggies in a rich tomato broth, seasoned with oregano and parsley.

Ingredients 

1 tbsp olive oil

60 gram onions, chopped

100 gram carrots

100 gram bell pepper

30 gram celery

1 tsp minced garlic

1 tsp dried oregano

1/2 tsp paprika

1/4 tsp sea salt

1/4 tsp black pepper

1/2 cup parsley

790 grams diced tomatoes

2 tbsp cilantro 

Directions

In a large pot, heat about 1 tablespoon extra virgin olive oil over medium-high heat. Add onions, carrots, celery, bell peppers, and garlic. Cook, stirring occasionally, for 5 minutes.

Add broth and tomatoes. Season with oregano, paprika, salt and pepper. Cook over medium heat for 10 minutes.

Add the meatballs and pasta. Cook for 10  minutes or until pasta is cooked.


Remove from  heat and stir in parsley. Transfer to serving bowls, and if you like sprinkle a bit more grated Parmesan cheese. If you like heat, add some crushed pepper flakes.
