Mama's Best Potato Soup 

Ingredients 

Broth

400 gr beef shank

40 gr bone marrow

2 tbsp olive oil

1/2 tbsp sea salt

1/2 tbsp black pepper

100 gr leeks, cut in rings

100 gr rutabaga

100 gr carrots, cut in cubes

1 tbsp minced garlic

1/2 tbsp oregano

1/2 tbsp rosemary

1/2 tbsp tarragon

40 gr onions, chopped

salt and pepper

6 cups water, and more

Soup

1300 gr russet potatoes

270 gr meat, from bone

450 gr ground beef

6 wieners

50 gr leeks

50 gr carrots.

Directions

Prepare the broth, salt and pepper the beef and brown on both sides. 

Remove the meat, than add Rutabaga, Carrots and Leek and Garlic until soft, add the dry ingredients and fill up with 6 cup of water, return the meat and simmer for an hour. 

Remove the meat and drain the broth to a sire. Dissolve the ingredients. Cut or shred the beef.

Peel the Potatoes and add to the broth, cook the potatoes until soft. In the meantime brown the extra meat and ground meat. Slightly Smash the soft potatoes, add the meat and later the wiener. Add more water when needed and seasoning when needed. 

Add some more salt or beef broth.
