Is buckwheat the healthiest grain?

Buckwheat is a highly nutritious whole grain that many people consider to be a superfood. Among its health benefits, buckwheat may improve heart health, promote weight loss, and help manage diabetes. Buckwheat is a good source of protein, fiber, and energy.

Ingredients 

150 grams buckwheat

1 tbsp chicken broth

120 grams cherry tomatoes

120 grams cucumbers

90 grams feta cheese

4 olives

40 grams scallion

1/4 cup dill

Dressing 

Salt and pepper (to taste)

1/4 cup lemon juice

2 tbsps olive oil

2 tsps grey poupon dijon mustard

3 grams mint leaves

3 grams basil

3 grams parsley

Directions

Place buckwheat and chicken broth in a small stock pot and bring to a boil. Cover with lid and reduce heat to low. Cook until liquid is absorbed, 15 minutes. Fluff with a fork and place wheat in a large bowl to cool slightly. Add all remaining ingredients to the bowl and toss gently with the bulgur wheat. Season with salt and pepper to taste.

If you don’t plan to eat immediately, you may wish to reserve a bit of the lemon juice and olive oil to dress the dish before serving. Otherwise, the bulgur wheat will absorb some of the vinaigrette over time. Can be stored in an air-tight refrigerated container for up to 7 days.
