Lemon Cauliflower Rice

This is a great side dish to serve with grilled or roasted meats or white fish.

Ingredients 

375 grams cauliflower rice

salt and pepper, to taste

2 tbsp lemon juice

3 gram mint leaves

20 gram scallion

2-1/2 tsp za'atar

1 tsp sumac

Directions

Grate the cauliflower if you’re making it from florets. If using store bought, check if it needs to be thawed.

Heat olive oil in a skillet over medium heat.

Add garlic and sauté for 1 minute.

Add cauliflower rice and sauté for 3-4 minutes.

Stir in lemon zest and parsley. Add a tablespoon of fresh lemon juice if desired.
