Rhubarb Vanilla Cake

You can do also a baiser topping or butter crumble or top with icing

Make one 8" or 12 cupcakes

Ingredients

1 package swerve white (vanilla) cake mix

3 eggs

1/3 cup olive oil

1/3 cup water

1 tbsp Vanilla extract

360 grams rhubarb

2 tbsp swerve icing confectioners' sugar


Direction

Preheat oven to 350F.

Greasing cake pan with butter. 

Whisk together eggs, water, oil and vanilla in a large bowl. Add baking mix and stir until combined.

Add the Rhubarb and mix it again.

Bake cake for 25-30 min. or cupcakes fr 15-20 min.. let cool completely, remove from pan and place on a wire rack for frosting.
