Key-Lime Pie Chaffle

Makes 8 Waffels - 4 portion - 50gram

Ingredients

1/2 cup almond flour

2 eggs

4 tbsps cream cheese 

2 tbsps monk sugar

1 tbsp lemon juice 

1 tsp baking soda 

 

FROSTING

1 lemon peel or zest raw

125 grams cream cheese 

1/8 tsp himalayan fine pink salt

70 grams unsalted butter 

2 tbsps monk sugar

1 tbsp lemon juice 

1 lemon peel or zest raw

Direction

1. Preheat the mini waffle iron.

2. In a blender add all the chaffle ingredients and blend on high           until the mixture is smooth and creamy.

3. Cook each chaffle about 3 to 4 minutes until it's golden brown.

4. While the chaffles are cooking make the frosting.

5. In a small bowl, combine all the ingredients for the frosting and mix it until it's smooth.

6. Allow the chaffles to completely cool before frosting them.
