Horseradish Steaks

Ingredients 

2 ribeye or sirloin steaks (about 1.5 inches thick)

Salt and black pepper to taste

2 tbsp olive oil

Horseradish Sauce:

1/2 cup sour cream

2 tbsp prepared horseradish

1 tbsp Dijon mustard

1 tbsp mayonnaise

1 tsp white wine vinegar

1 clove garlic, minced

Salt and black pepper to taste

1 tbsp chopped fresh chives (optional)


Directions

Prepare the Horseradish Sauce: In a small bowl, combine the sour cream, prepared horseradish, Dijon mustard, mayonnaise, white wine vinegar, minced garlic, salt, and black pepper. Mix until well combined. If desired, stir in the chopped chives. Cover and refrigerate until ready to use.

Preheat Your Grill or Pan: Preheat your grill to high heat or a cast-iron skillet over medium-high heat.

Season the Steaks: Pat the steaks dry with paper towels. Rub both sides with olive oil, then generously season with salt and black pepper.

Grill the Steaks: Place the steaks on the hot grill or skillet. Cook for about 4-5 minutes per side for medium-rare, or until they reach your desired level of doneness. Use a meat thermometer for accuracy—a medium-rare steak should be at 130-135°F (54-57°C).

Rest the Steaks: Remove the steaks from the heat and let them rest for about 5 minutes. This allows the juices to redistribute, ensuring a juicy steak.

Serve with Horseradish Sauce: Slice the steak against the grain and serve with a generous dollop of the prepared horseradish sauce on top.
