Almond stollen is a delicious and healthier variant of traditional Christmas cookies, especially suitable for those who want to reduce their carbohydrate intake. This almond stollen is prepared without sugar and with little flour, instead ground almonds and sweeteners such as erythritol or stevia are used. Almond flour is also often used to improve the texture of the stollen.

Ingredients

125 gr almond flour

40 gr swerve swerve confections sugar

1/2 tsp agar powder

1/4 tsp baking powder

40 gr butter

125 gr fage greek yogurt

1/4 tsp cinnamon

1/4 tsp cardamon

1/4 tsp nutmeg

1 tbsp almond extract

1 tbsp lemon extract

1 tbsp orange extract

orange zest

lemon zest

40 gr gestiftelte Almonds


Directions

Bake the stollen for about 45-55 minutes at 160°C 320F convection.

Put almond flour, baking powder, guar gum and erythritol in a bowl. In a separate bowl, whisk together the curd, soft butter, eggs, almond flavoring and vanilla and fold this into the dry ingredients. Knead until a homogeneous mass is formed. Now add the almond slices as well as orange and lemon zest and knead the dough well again. Shape the dough into a loaf and place it on a baking sheet lined with baking paper – alternatively, you can use a greased stollen or loaf pan. When the stollen has cooled down, dust it with some powdery sweetener.
