Cauliflower Au Gratin

Ingredients 


500 gram Cauliflower

1 tbsp olive oil

1 tsp sea salt

1 tsp black pepper

40 gram bacon

50 gram mexican cheese

50 gram mozzarella cheese

1 tsp chili & lime spice blend

1/2 cup whipped cream

50 gram cream cheese

Directions

1. Preheat your oven to 400F (200C).

2. Break the cauliflower into florets and boil in lightly salted water for about 5 minutes.

3. Drain and set aside.

4. Dice the bacon and fry until crisp. Reserve, including the fat.

5. Mix together the cream cheese, cream and most of the grated cheese. (Reserve around 1/4 of both the cheddar and the other cheese to use for the topping.)

6. Chop the leeks and mix into the cheese mixture.

7. Add the cauliflower and bacon, preferably with the fat from frying.

8. Add spices and season with salt and pepper to taste.

9. Pour into a greased baking dish and top it off with the reserved grated cheese.

10. Place in oven for 25-30 minutes until the gratin is done.

11. While the gratin is baking, cook the chops. They can be fried (in the pan used for the bacon) or grilled. Season with salt and pepper and serve.
