Mediterranean-Style Salsa

Mediterranean twist on homemade salsa. If you want a spicy kick to it, then add some chopped jalapeño.
Ingredients
12-ounce cherry tomatoes
2 shallots, finely chopped
1 garlic glove
1/2 cup parsley, fresh chopped
1/4 cup mint leaves
6 olives
1 tsp jalapeño, chopped
salt and pepper to taste
3 tsp lemon juice
olive oil
Directions
Place quartered cherry tomatoes, chopped shallots, minced garlic, chopped fresh herbs, chopped kalamata olives, and chopped jalapeno in a mixing bowl.
Season with kosher salt, pepper, and sumac (start with a heaping 1/2 tsp sumac, add later if needed). Toss gently.
Add lemon juice and a generous drizzle of quality extra virgin olive oil. Toss to combine. Set aside for a few minutes to let the flavors combine.
Serve with pita chips or chips of your choice. Enjoy!
