Arugula Summer Salad with Berries and Burrata

This triple berry salad is the perfect summer salad with colorful fresh berries, peppery arugula, and creamy burrata cheese all tossed in a light, citrusy dressing with good extra virgin olive oil.  

You can substitute the Burrata with Mozzarella Cheese or Feta Cheese.

Ingredients 

6 oz baby arugula

1 small shallot, sliced

6 oz fresh blackberries

6 oz fresh raspberries

6 oz fresh strawberries

4 oz burrata cheese


Dressing

3 tbsp olive oil

1 large lemon juice

salt and pepper to taste

Directions

Make the dressing. Place extra virgin olive oil, lemon juice, salt and pepper in a small bowl. Whisk to combine.

In a large mixing bowl, add the arugula, shallots, and berries (all three berry varieties). Pour the dressing on top and gently toss.

Transfer the berry salad to a serving platter and arrange burrata cheese on top. Enjoy!
