Coconut Pancakes

Ingredients

4 eggs

1/4 cup unsweetened almond milk 

1 tbsp choc zero maple syrup ChocZero

1/4 cup organic coconut flour 

1/4 tsp baking powder Rumford

1/4 tsp sea salt

1 tsp vanilla extract

Directions

In a large bowl, whisk eggs, almond milk (or coconut milk), and maple syrup until combined. In a separate bowl whisk coconut flour, baking powder, and salt until well blended. Add dry ingredients to wet ingredients, and stir with a fork until well combined and no lumps remain. a scant 1/4 cup onto a hot griddle.
