Ingredients
1 cup pineapple juice (preferably fresh)
1/4 cup soy sauce
1/4 cup brown sugar
2 tablespoons olive oil
2 cloves garlic, minced
1 tbsp jalapeno pepper
1/4 cup fresh lime juice
2 tbsp garlic, minced
fresh cilantro
1 tablespoon fresh ginger, grated
1 tablespoon apple cider vinegar
1/2 teaspoon red pepper flakes (optional, for a bit of heat)
Salt and pepper to taste
Directions
Combine Ingredients: In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, olive oil, minced garlic, grated ginger, apple cider vinegar, and red pepper flakes (if using) until well combined.
Season: Add salt and pepper to taste, and give it another good mix.
Marinate the Meat: Place your choice of meat (such as chicken, pork, or beef) in a large resealable plastic bag or a shallow dish. Pour the pineapple marinade over the meat, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably longer, to allow the flavors to penetrate.
Cooking Instructions:
For Chicken: Grill, bake, or pan-fry the marinated chicken until fully cooked and golden brown. Depending on the size and cut of the chicken, this typically takes about 20-30 minutes at 375°F (190°C).
For Pork: Grill, bake, or pan-fry the marinated pork until fully cooked and caramelized. Cooking time will vary depending on the cut, but generally takes about 30-45 minutes at 375°F (190°C).
For Beef: Grill, broil, or pan-fry the marinated beef until fully cooked to your desired doneness.
