Swabian German Potato Salad, known as Schwäbischer Kartoffelsalat, is a delicious and traditional dish from the Swabia region in Southern Germany. Unlike many other potato salads, it doesn’t use mayonnaise. Instead, it features a tangy vinaigrette that soaks into the warm potatoes, giving it a unique and flavorful taste.
Ingredients
18 baby potatoes
30 grams onions
4 tbsps german seasoned vinegar
4 tbsps olive oil
1 tbsp german style mustard
1/2 cup chicken broth
1 tsp sea salt
3/4 tsp black pepper
50 grams uncured bacon
Directions
Boil the potatoes with their skins on. Then peel and cut into slices. Dice the onion and add it. Add a generous pinch of pepper and salt. Add the warm, clear broth and diced warm bacon. Season with oil and vinegar and mustard, add more oil or vinegar when needed. Serve while still warm.
