Mediterranean Watermelon Salad

A refreshing summer salad with watermelon, feta, mint and sumac. 

Ingredients 

500 gram watermelon

2 tbsp maple syrup

2 tbsp lime juice

1 tbsp olive oil

1 pinch sea salt

1/4 tsp sumac

20 gram onion, diced

100 gram cucumber, diced

15 gram mint

15 gram basil

75 gram crumbles feta cheese

Directions

In a large serving bowl, whisk lime juice, honey and sumac. Add sliced onions and toss to coat. Let onions sit for a few minutes.

Add cubed watermelon, and feta and gently toss everything together.

Garnish with chopped herbs and an extra sprinkle of sumac and give one gentle toss and serve.
