Pumpkin Coconut Energy Balls

These easy pumpkin-spiced coconut oat balls make a great, packable afternoon snack or a delicious party appetizer
Ingredients
1/2 cup old fashioned oats
2 tsp pumpkin pie spice
1/4 tsp sea salt
1/8 tsp chili powder
1/2 cup sliced almonds
1/3 cup unsweetened coconut flakes
3/4 cup organic pumpkin
2 tbsp maple syrup
Directions
Preheat the oven to 300 degrees Fahrenheit.
Spread oats, almonds, and coconut on a large, rimmed baking sheet. Bake, stirring occasionally, until they are lightly browned, about 8 to 10 minutes. Let them cool completely on a wire rack. In a large bowl, mix together pumpkin, maple syrup, pumpkin pie spice, salt, and cayenne. Add the toasted oat mixture to the bowl and stir. Form the mixture into 20 balls, using about 2 teaspoons for each. Arrange the balls on a serving tray. They can be served immediately or covered and refrigerated for up to 2 days.
