Grilled Feta with Garlic-Tomato Medley

Ingredients 

8 oz feta cheese, block

2 cups cherry tomatoes, halved

4 cloves garlic, minced

3 tbsp olive oil1

1 tsp dried oregano

Salt and black pepper, to taste

Fresh parsley, for garnish

Crusty bread, for serving

Directions

Preheat your grill to medium-high heat.

In a bowl, combine the halved cherry tomatoes, minced garlic, olive oil, oregano, salt, and pepper. Toss to coat.

Place the feta block on a sheet of aluminum foil large enough to create a pouch. Pour the tomato mixture over the feta.

Fold the foil into a pouch, sealing it tightly to prevent juices from escaping.

Grill the feta and tomatoes for about 15-20 minutes, or until the tomatoes are softened and the feta is warm and slightly caramelized.

Carefully remove the pouch from the grill. Open it up and sprinkle fresh parsley over the top.

Serve the grilled feta hot with slices of crusty bread for dipping and enjoying the delicious juices.
