Green Goddess Chicken Salad

Ingredients 

DRESSING

30 grams avocados

1 cup plain kefir lowfat

2 tbsps rice vinegar

1/2 tbsp salt

1 tbsp parsley

1/4 tsp dried tarragon

3 grams mint leaves

1 tbsp cilantro

SALAD

60 grams Romaine lettuce

60 grams cucumbers

60 grams cherry tomatoes

240 gram chicken breasts

60 grams  feta cheese 

Directions

To prepare dressing: Place avocado, buttermilk, herbs, vinegar and salt in a blender and puree until smooth.  

To prepare salad: Toss lettuce and cucumber in a bowl with 1 tablespoon of the dressing. Top with chicken, cheese and tomatoes. (Refrigerate the extra dressing for up to 3 days.)
