Lamb Meatballs with Green Goddess Sauce

Ingredients 

450 grams ground lamb

1 egg

2 tbsp cilantro

10 grams pork rinds

1 tsp cumin

1 tsp sumac spice

1 tsp chili flakes

1/2 tsp sea salt

1/2 tsp black pepper

2 tsp garlic

10 grams onions

30 grams feta cheese

20 grams greek yogurt

2 tsp greek seasonings

1 olive oil spray

FOR THE GREEN GODDESS SAUCE

1 1/2 c. Greek yogurt

1/2 c. mayonnaise

1 1/2 c. basil leaves

1/2 c. parsley leaves

1/4 c. freshly chopped chives

1/4 c. fresh oregano leaves

Juice of 1 lemon

2 cloves garlic

Kosher salt

Freshly ground black pepper

Directions

Preheat oven to 425°. 

Line a large baking sheet with parchment paper. In a large bowl, combine ground lamb, egg, garlic, parsley, oregano, cumin, salt, pepper, and red pepper flakes. Form into 16 meatballs and place on prepared baking sheets. 


Drizzle meatballs with oil and bake until golden and cooked through, 20 minutes. 


Meanwhile, make sauce: In a food processor blend together yogurt, mayonnaise, basil, parsley, chives, oregano, lemon juice, and garlic. Season with salt and pepper and adjust with any additional herbs to taste. 


Serve meatballs warm with green goddess sauce for dipping.
