Baked Potato with Egg

Ingredients

3 large, floury boiled potatoes

2 tbsp olive oil

2 tsp sea salt

1 tbsp butter

60 grams Cheddar cheese

1 tbsp bacon bits

3 eggs

1 tsp Salt and pepper (to taste)

1 tbsp chives

Directions

Preheat the oven to 180 °C.

Place the potatoes on a baking tray, coat them well with oil and sprinkle salt over them.

Bake them for about an hour. If you prepare more potatoes, you have to add 15 minutes per potato.

Cut the cooled potatoes lengthwise, scrape out the inside and store it (e.g. for mashed potatoes etc.)

Sprinkle the hollowed-out potatoes with butter inside.

Add cheese, bacon, an egg, salt and pepper to each potato. Sprinkle them with chives.

Bake them for 25 minutes until the protein is cooked.

Serve them warm and sprinkled with chives!
