Dinkel-Mandel Bread

A package of fresh yeast (i.e. a cube) contains 42 grams. Basically, one pack of dry yeast corresponds to the raising power of half a cube of fresh yeast: 7 g from the bag corresponds to 21 g of fresh yeast according to the rule of thumb. Instead of a cube of fresh yeast, you can use 2 packets of dry yeast.

Ingredients

700 gr whole spelt flour 

100 gr almond flour 

1 package dry yeast

1 pinch sea salt

500 mls warm water

20 grams sprouted pumpkin seeds


Directions

The 4 ingredients mix together, then add 500ml of warm water. mix the dough well and let go in a warm place for 30 minutes. Moisturize the bread with water on top, this makes a great crust. preheat the oven to 392F, place the bread on a baking sheet or pan on the medium rail. Bake it for 60 minutes.
