Ingredients 


760 gram Rotini

1 tsp sea salt

1 tsp black pepper

160 gram sweet peas

120 gram bacon, diced

1/4 cup vinegar, altmeister

150 gram avocado oil mayo

50 gram sour cream

1 tbsp mustard

30 gram green onion

100 gram red bell pepper

250 gram uncured ham, diced

1 tbsp olive oil


Directions

1. Cook the Rotini pasta according to the package instructions in a large pot of salted boiling water. Once cooked, drain and rinse the pasta under cold water to stop the cooking process. Set aside.

2. In a large skillet, cook the diced bacon over medium heat until it becomes crispy. Once cooked, remove the bacon from the skillet and place it on a paper towel to drain excess grease.

3. In a small bowl, whisk together the Altmeister vinegar, avocado oil mayo, sour cream, and mustard to make the dressing. Season with salt and pepper to taste.

4. In a large mixing bowl, combine the cooked Rotini pasta, sweet peas, cooked bacon, green onion, red bell pepper, and diced uncured ham.

5. Pour the prepared dressing over the pasta mixture and toss until everything is well coated.

6. Drizzle the olive oil over the pasta salad and gently toss to incorporate.

7. Cover the pasta salad and refrigerate for at least 1 hour to allow the flavors to meld together.

8. Before serving, give the pasta salad a final toss and adjust the seasoning if necessary.

9. Serve the Rotini pasta salad as a delicious side dish or a light meal.
