Blueberry Lime Cheesecake Cupcakes

Ingredients
1-1/2 cup all purpose flour
1/2 cup unsalted butter
1/4 cup monk sugar
1/2 tsp vanilla extract
8 oz cream cheese
1/4 cup confections monk sugar
1 tsp lime zest
1 tbsp lime juice
1 cup blueberry preserves
1 cup fresh blueberries
1/2 cup purple tinted cream cheese frosting
lime slices and zest for garnish
Direction
Preheat your oven to 350ºF (175ºC) and line a muffin tin with paper liners.
Mix flour, softened butter, granulated sugar, and vanilla extract to form a soft dough. Press into the muffin tin and bake for 10 minutes.
Beat cream cheese, powdered sugar, lime zest, and lime juice until smooth.
Layer blueberry preserves over the confections monk sugar cooled crust, then pipe the cream cheese mixture on top.
Top with more blueberry preserves and a swirl of purple-tinted cream cheese frosting.
Garnish with fresh blueberries, lime slices, and lime zest.
Refrigerate for at least 1 hour before serving.
