Lemon Dill Sauce

1 - 100 gram

Delicious for dipping in bread and veggie sticks, and dolloping on salmon (or trout!). Unlike many creamy sauces, Dill Sauce is not rich and heavy. 

Ingredients

1/2 cup minced shallots

1 tsp minced garlic

1/2 cup white wine

juice of one lemon

1/4 cup fresh dill, chopped

1 tsp dijon mustard

1/2 cup heavy cream

5 tbsp unsalted butter

salt and pepper, to taste

some horseradish

Directions

In a saucepan, combine the shallots, garlic, wine and lemon. Bring the liquid up to a boil. Stir in the dill and cook for 3 min. 

Whisk in the mustard and cream, continue to cook for 2 min. whisk in the butter a cube at a time, until all the butter is incorporated. Season with salt and pepper.
