Herb Mayonnaise

This homemade mayo recipe is easy to follow, uses only a few ingredients, and makes the best mayo… without all the preservatives!  Use double amount for Eggsalad.

Ingredients

200 ml olive oil

2 tbsp lemon juice

1 egg

1/2 tbsp Dijon mustard

1/2 tsp sea salt

1 tsp monk sugar

1/2 tsp white pepper

Herbs, parsley, dill, chives, garlic


Directions

To make quick mayo, you need a hand blender and a cylindrical vessel whose diameter is only slightly larger than the cutting edge of the hand blender.

Add the rapeseed oil, lemon, egg, mustard, salt, pepper and sugar to the container. Now lower the wand to the bottom of the vessel, turn it on at full speed and slowly pull it up. The mayo is basically ready.

If necessary, season with salt, pepper and sugar to suit your personal taste and remember for the future for your own “tailor-made” recipe.

Depending on your personal taste, the mayo can also be pimped up with herbs, such as dill for fried fish or chives for pickled meat. There are hardly any limits to your imagination here. Personally, I generally like a little chopped garlic with it. The herbs are simply added to the liquid before using the blender.
